Chocolate Tiffin

Ingredients

  • 250g (9oz) Digestive biscuits
  • 150g (5oz) Butter
  • 4 tbsp FT Golden Syrup
  • 4 tbsp FT Cocoa Power
  • 110g (4oz) FT Raisins
  • 110g (4oz) FT Dried apricots chopped
  • 150g (5oz) each of white and plain FT Chocolate

Method

  1. Grease the sides of a 20cm (8in) square tin and line the bottom with baking paper
  2. Put the biscuits inside a clean plastic bag, secure, and bash with rolling pin to make uneven crumbs.
  3. Melt the butter and syrup in a saucepan. Stir in the cocoa, raisins and chopped apricots.
  4. Add the biscuit crumbs and stir thoroughly. Spoon into the tin and press down firmly.
  5. Melt the plain and white chocolate in two separate heatproof bowls over pans of simmering water, or microwave in two bowls on medium heat for about 2 minutes.
  6. Place alternate spoonfuls of white and plain chocolate on to the biscuit base, then swirl gently to create the marbled effect. Tap the tin to level the surface.
  7. Chill in the fridge for an hour before cutting into squares with a warm knife.

Fairtrade Green Beans with Garlic, Ginger and Fairtrade Almonds

Ingredients

  • 450g/1lb Fairtrade green beans
  • 3 tbsp Fairtrade olive or sesame oil
  • 1 clove garlic, sliced thinly
  • 100g/4oz slivered almonds
  • 1tsp fresh grated root ginger
  • 2 or 3 tbsp soy sauce
  • 1 tsp Fairtrade sesame seeds

The actor, comedian, Celebrity Mastermind star and Fairtrade supporter sent us this delicious recipe using Fairtrade ingredients.

  1. Cook the beans in boiling water for 10 minutes. Drain and place into a warm serving dish.
  2. Gently heat the oil with the garlic until it is just turning golden.
  3. Add the grated ginger and then quickly toss in the almonds and the soy sauce, stir and brown a few minutes longer.
  4. Pour the mixture over the green beans and sprinkle on sesame seeds.
  5. Serve immediately.

Serve with rice and a glass of white wine – both Fairtrade of course.
